I replaced it with a new one but before I start the machine, where is this metal that has been removed from the piston? Why does this happen (I realize lack of oil ... what makes the gouges)? The rings looked okay and I noticed that most of the gouges stopped at the rings.

If there's big clumps of metal, how do I get them out?

If it were me, I would disassemble the engine, clean and inspect the cases and crankshaft then reassemble with new crank bearings and seals but that's just me. You might be able to get away with flushing the cases out with some pre mixed gas but I advise against that seeing you can never know with 100% certainty that all of the metal chips have been removed from the bearings. From the looks of that piston I would say something definitely gave, like a bearing from the big end rod or crankshaft. You might want to check the rod for any play, the reason the debris didn't make it to the top of the piston is because the rings stopped it.

Post Re: So This Happened ...
I just remembered I took it to a moped shop and they rode it and it soft seized, so they rode it again. And it soft seized again. Then they wanted to charge me $125 for looking at it lol. I was so angry I left it at the shop for months and then put it away for months. When I finally looked at it I noticed the oil line to the carburetor wasn't connected. Who's fault was that? I really can't say. My bad for taking a scooter to a moped shop. I hate them.

I did replace the cylinder and piston and it moves freely (that's a good sign right? I replaced the top bearing even though it seemed to be in good shape. I'm going to tear it back down and replace the cir-clips this week because I have nightmares about the way I put them in (first timer). I'll check the rod for any play.

No oil there is going to be far more damage then just the pistion and bore.
The air and fuel and oik come in through the crank
This lubes the crank and bearings and starts to build compresion
It then works it's way into the intake ports where it lubes and cools the bore

Okay so I was riding it around (albeit with little power). Usually once it warmed up it started losing power. Is it safe to say (I mean I won't hold you guys to it) that if everything feels like it's moving freely that I probably don't have any garbage down in the crank? I really don't have the tools or the wherewithal to tear the engine down.
